Whole Wheat Flour Bagels

Bagels are one of the most delicious type of bread and looks like Doughnuts :) My husband was actually wondering if I am preparing doughnuts or what!!! 

While looking to recipes online, at first I thought it will be tough, but then that was the whole challenge to finish it :) And here are the results :) 
The perfect ones have come out and We had it next morning applying butter on it.


With the help of two recipes and few modifications of mine,  I was able to get successful on making these cute small size Bagels with flavor of Basil, Oregano and Sesame Seeds.

So Let's quickly look at Ingredients:
  • 3 1/2 cups - Maida or Whole Wheat Flour ( I used Whole Wheat flour)
  • 1 cup or little more - Water
  • 3 tbsp - Sugar
  • 2 tsp - Instant Yeast
  • 1 1/4 - Salt
  • 1/2 cup - Water (To prove Yeast)
  • 2 tbsp - flax seeds (To be dissolved in 4 tbsp of water)
For Topping:
  • Sesame Seeds
  • Basil leaves
  • Oregano leaves 
  • Milk for brushing 
Method:
I have used King Arthur's 100% Whole Wheat Flour and not the regular chakki Aata :) Mix all the dry ingredients along with just 1 tbsp of Sugar into it. (Salt, Sugar)

Add the Yeast mixture, if instant then no need to prove it. I used Instant Yeast.
Knead the dough very properly pouring luke warm water at a time. Knead for about 10-15 minutes. Form a non-sticky and spring like dough.
Cover the dough with a towel or cling wrap in a warm place for 1.5 hours. 
If using Active Dry Yeast (Prove it in 1/2 cup of water with 1 tbsp of sugar and yeast, keep it for 10 minutes and let it get rise)
The 1st Rise :) :) :)


Dust some flour on a plate and knead the dough for couple of minutes. And then make small balls like of Parathas



Joint all the sides of the dough and then swirl it to make a round dough.

With the help of Index finger just make a hole and swirl it around your finger until you get the deserving hole in the dough. Make it for all balls. Once it is done, Cover it with the cling wrap for 20 minutes and it will again rise.

Meanwhile, preheat the oven in sometime at 425 F. 

In a big size pan, boil water and add 2 tbsp of sugar into it. Once boiled, add bagels into the water and let it boil on one side for 90 seconds and other side 90 seconds. Take a look below, it will be double the size. 

Top it up with the seasonings of your choice and brush it with the milk. Don't worry they won't come out while in the baking :) 

Bake it for 20 minutes in a preheated oven. For first 10 minutes one side and then flip it the other side for another 10 minutes. 

Apart from butter, try using Philadelphia  Jalapeno Cream Cheese, you will be amazed to eat it :) :) :)
