I was very much excited and nervous to make one of my favorite dessert for my 30th Birthday :) Shrikhand, as it looks is pretty much easy to make it at home and it doesn't take your whole day to make it. Once you know, hardly an hour to one and half :) I got the recipe from one of my Aunt. Shrikhand goes excellent with Garma garam Puris :)
Lets' look at Ingredients:
- 4 cups - Fresh yogurt (homemade/store) Make sure if it is homemade, it has to be fresh. Not even 3 days older.
- 1 1/2 (1.5) cup - Sugar
- 1/2 tsp - cardamom powder
- 2 -3 tsp - milk
- Few strands of kesar/saffron
- Bunch of Newspapers
- Cheese cloth or cotton cloth
Method:

Fresh homemade curd. Mix milk and kesar. Keep aside. |

Place bunch of news papers on flat surface. Keep the Muslin cloth over the news paper and spread the yogurt all over. Again cover it with the cloth, paper towels (I had plain white paper towels that can soak water). Keep a heavy weight on to it so that extra water gets soaked in paper towels and newspapers. Keep this for 10 minutes. |

Repeat the above mention process twice for 10 minutes. |

Now you can see all the water has been removed and strained curd is ready. |

Strain the curd in the strainer to make it smooth with your hands. |

Add cardamom powder, chopped dryfruits, milk kesar mix and give it good mix.

Garnish it with the chopped Pista and few strands of Kesar. |
