Bharva or Stuffed Bhindi

This will be a special dish of mine as I made it on my 30th Birthday :) Turned out amazing and goes well with Puris ! Do try it out once and you will make it more!!


Lets' see the Ingredients:

  • Half bag of Bhindi/Okra/Ladies Finger - Washed, Dry and cut it in slits from between with knife. Just need to put a slit in between i.e. it. 
For Stuffing:
  • 6-8 tbsp - Coriander Powder (Dhaniya powder)
  • 2 tbsp approx - Red Chilli Powder
  • 1 1/2 tsp - Amchur Powder
  • 2-3 tbsp - Fennel seeds (Saunf)
  • Salt to the taste 
  • 4 tbsp - Oil (It is approximately, if you think stuffing looks dry while mixing it add more)
Tempering:
  • 4 tbsp - Oil (While cooking Bhindi, we have to be little generous in oil) 
  • 2-3 tbsp - Urad daal 
  • 2 tbsp - Mustard Seeds
  • 1 Chopped green chilli 
  • Grated Ginger
  • Grounded Peanut
  • Extra Masala if left while stuffing. (If it not left, you can add little bit of Coriander Powder and fennel seeds)
Method:

Washed, Dry and Cut slits of Bhindis 

Add all the ingredients for making the stuffing. Give it a good mix. 

Filling the stuffing in between of slits. Looks so pretty :) 

Heat Oil. Add mustard seeds, hing, chillies, ginger and urad daal. Let it get saute for few minutes and then add Bhindis. Give it a mix at the interval of 5-7 minutes. Then add Grounded Peanut powder into it and mix it. 

Ready to eat :) :)
