Bottleguard (Doodhi) or Zucchini Muthiya

Zucchini or Bottleguard, one of the healthiest variety in food. You can always play around with making Muthiyas, Theplas, use it in the Bhaaji of Paav Bhaaji.

Today is the day of Muthiya :) 

Ingredients:

  • 2 cups - Grated Zucchini or Bottle guard (Doodhi)
  • 1/4 cup - Chopped Cilantro/Coriander Leaves
  • 1/4 cup - Chopped spinach (Optional, I didn't add in Muthiya this time)
  • 3 cups - Wheat flour 
  • Ginger - Green Chilli Paste - as per the taste
  • 1 tsp - turmeric powder
  • 2 tsp - Red chilli powder
  • 2 tsp - coriander powder
  • 4 tsp - Fennel seeds (Saunf)
  • 4 tsp - Sesame seeds (til)
  • 2 tsp - sugar 
  • Few drops of fresh lime juice
  • 2 tbsp - oil 
  • Salt to the taste
Method:

Grated Bottleguard 

Mix wheat flour, chopped cilantro, optional spinach, green chilli & ginger paste, sesame seeds, turmeric powder, salt, sugar, fennel seeds, coriander powder, lime juice and oil. 

Give it a good mix with hands (apply oil in your hands) and make it a dough like chapati. 

Dough is ready and now rolls would be ready in no time!

Heat the water in the vessel and let it come to the boil. Place the thaali on top of it (thaali should be like this as shown above)Apply little oil in your hands and start rolling as shown in the above picture. Cover the lid and put it on high flame for around 20-25 minutes. 

Muthiyas are ready and cool it down for some time. 

Ready to get shallow fry and have it with delicious Cilantro chutney or Tomato Ketchup.
